In the almost 10 decades that have passed since its creation, Caesar Salad has endured as a satisfying culinary mainstay. Italian immigrant restauranteur Cesare "Caesar" Cardini (Feb. 24, 1896-Nov. 3, 1956) created the elegantly simple salad in 1924 at his restaurant, Caesar's Restaurant, in northwestern Mexico's Baja California resort city of Tijuana.
Caesar's Salad garners appreciation for easy preparation, attractive presentation and satisfying deliciosity. The classic salad also appeals to innovative food lovers via the recipe's facility for transformation. Caesar's Salad accommodates an array of cooking techniques, cuisines and food preferences. Non-vegetarian and vegetarian versions of the original salad find further enhancement as different food groups. For example, North Indian Chef Sanjeev Kapoor casts Caesar's Salad in a Mughal Era cuisine setting with his main dish or salad entry, Chicken Tikka Caesar Salad.
North Indian Chef Ajay Chopra (born Feb. 8, 1977) converts the classic salad into an enticing snack with his recipe for Veg Caesar Wraps. Chef Ajay's tortilla-wrapped Caesar Salad recipe fuses Italian and Mesoamerican cuisines. His suggestion of salsa with nacho chips as the recipe's side snack further emphasizes Caesar Salad's Mesoamerican birthplace.
Chef Ajay's Veg Caesar Wraps snacks emerge from four preparations. Firstly, the recipe constructs the Caesar Dressing. The second set of preparations yields the recipe's salad, which is then combined with the dressing. Thirdly, the salad is transferred to the tortillas and finalized as wraps. The fourth preparation involves the recipe's side snack of nacho chips with homemade salsa.
The Caesar Dressing calls for 3 tablespoons eggless mayonnaise; black pepper powder and salt, to taste; 2 teaspoons chopped garlic; 2 tablespoons grated Parmesan cheese; 2 teaspoons chopped garlic; juice from 1/2 lemon; and 2 teaspoons mustard paste. The ingredients are added to a bowl and then are whisked together. The bowl is set aside during the salad's preparation.
In a bowl, the salad base is created with 1 medium green zucchini, julienned and sautéed; 6 to 7 mushrooms, sliced and sautéed; 1/4 cup green, yellow and red peppers, julienned and sautéed; 7 to 8 romaine leaves, torn into bite-sized pieces. Two spoonfuls of the Caesar Dressing and 2 tablespoons Parmesan cheese flakes are dropped on top of the torn romaine leaves. Then Chef Ajay puts a food preparation glove on one hand for tossing these ingredients.
Next, 8 to 9 black pitted olives are added to the salad. Chef Ajay hand-blends the olives into the salad as the final step in the recipe's preparation of Caesar Salad. The salad is set aside during preparation of the tortilla wraps.
Chef Ajay explains tortillas as "Mexican rotis." Roti (Sanskrit रोटी, roṭī; रोटिका, roṭikā, “bread”) is the round flatbread that originated in the Indian subcontinent.
The recipe calls for 4 tortillas. Each tortilla receives one dollop of Caesar Dressing for generous spreading across the top. Two tongfuls of the salad are deposited onto each tortilla, which then are carefully rolled into the cylindrical shape that characterizes wraps. Next, a diagonal cut aesthetically halves each wrap.
The menu suggestion of a side of salsaed nacho chips calls for homemade salsa. Chef Ajay's homemade salsa calls for adding, to a bowl, 1 small, diced tomato; 1 small, diced red onion; 1 teaspoon chopped green chili; 2 teaspoons fresh, chopped coriander leaves; juice from 1/2 lemon; black pepper powder and salt, to taste; 2 tablespoons tomato juice; and 1 teaspoon red chili sauce. The ingredients are blended gently together with a spoon.
The portion of nacho chips is "as required." The chips are placed alongside each wrap. The recipe's final step drizzles the chips with salsa.
