Caesar Salad nears its 100th anniversary before the middle of the 21st century's third decade. Italian immigrant restauranteur Cesare "Caesar" Cardini (Feb. 24, 1896-Nov. 3, 1956) created his quickly classic salad in 1924 in his restaurant, Caesar's Restaurant, in cosmopolitan Tijuana in northwestern Mexico's Baja California state.
Chef Cesare's salad has garnered global popularity, both as its original recipe and as a plethora of non-vegetarian, vegan and vegetarian variations. Chicken Caesar Salad numbers among well-known non-vegetarian variations of the classic salad.
Somdatta Saha considers Caesar Salad's chicken variation in her June 23, 2021, post, "Watch: Make Classic Chicken Ceasar [sic] Salad At Home With This Easy Recipe," for NDTV Food, food portal for India news media company New Delhi Television (NDTV) Limited's digital channel, NDTV Convergence Limited. India's Covid-19 full and partial lockdowns in 2020 and 2021, respectively, inspired a switch from restaurant dining to home-cooked meals, explains NDTV Convergence's assistant editor. One of the lockdown's positive consequences concerns enforced experiments in at-home cooking, which have ". . . upgraded many of us from cooks to home chefs," she observes.
Enthusiastic home cooking motivates a "constant search" for at-home replication of favored dishes from favorite restaurants. Thus, a Chicken Caesar Salad recipe discovered during a search triggered an instant reminiscence of ". . . our favourite salad joint in town."
"For the unversed . . .," food appreciator Somdatta Saha briefly describes Chicken Caesar Salad's parent dish, Caesar Salad, as a "simple" mixture of "lettuce, croutons and dressing," to which proteins may be preferentially added.

One chicken breast tops the list of ingredients for home chef Somdatta's Chicken Caesar Salad. The recipe also itemizes 1 cup of lettuce leaves; 2 slices of bread; 1/2 cup of cream; 1/4 cup of grated cheese; 1 teaspoon of oil; 1 teaspoon of black pepper powder; 1 teaspoon of chopped garlic; 1 teaspoon of garlic powder; and salt, to taste.
Saha's Chicken Caesar Salad begins with preparing the chicken breast. A marinade of olive oil, black pepper powder, salt and garlic powder is rubbed onto the six- or seven-scored chicken breast. The marinade sits for an hour.
Making the salad's bread croutons requires two slices of bread. After removal of the crusty edges, the stacked slices are cut in thirds, in a lengthwise and widthwise crosshatch.
The 18 small bread cubes are brushed with oil. After baking at 180 degrees Celsius (356 degrees Fahrenheit) for 10 to 15 minutes, the golden bread cubes are set aside.
The marinated chicken breast is placed in a tawa (Hindi: तवा, tawa, "pan, griddle"), or grill pan. The chicken is turned while grilling to cook both of the sides well. After grilling, the chicken is shredded into strips.
For the salad's dressing, cream is added to a small bowl. Grated cheese is spooned onto the cream. Black pepper powder, salt and chopped garlic are sprinkled over the cheese. The dressing ingredients are mixed well in the bowl.
Placing chopped lettuce leaves in a salad bowl signals the assembly of all of Chicken Caesar Salad's ingredients. Bread croutons enter the salad after the addition of the grilled chicken strips. The recipe's creamy dressing is dropped on top. Two spoons are used to mix all ingredients together well. Then cheese is grated over the salad.
Home chef enthusiast Somdatta assesses her made-from-scratch, at-home, restaurant-style Chicken Caesar Salad: "And voila! A fulfilling bowl of chicken ceasar [sic] salad is ready for a fulfilling meal."

North Indian Chef Kunal Kapur's Watermelon Chutney Is Refreshing

North Indian Chef Kunal Kapur's Watermelon Chutney is a refreshing relish that delectably upcycles rinds; entails easy preparation; plates appealingly, colorfully and flavorfully; and irresistibly complements a variety of dishes, including Caesar Salad.
Chef Kunal describes his Watermelon Chutney as a "truly interesting recipe" in the summary for his May 10, 2020, YouTube presentation. He recalls the idiom "to make something from scratch" and invites: "Well friends let's make something from scratch today."
Starting from scratch sometimes implies a lengthy process. Chef Kunal's made-from-scratch Watermelon Chutney, however, promises a quality dish produced with uncomprised brevity.
Chef Kunal identifies watermelon rind, which usually is discarded, as ". . . the most intriguing ingredient of this Chutney . . ." Watermelon Chutney ends the "complete waste" of this recipe-friendly ingredient.
The rind is the section between the fruit's juicy, soft, sweet inner pulp, also termed flesh, and the tough outer skin. The thick rind's whitish color contrasts with the skin's speckled or striped greenness and the pulp's most common coloration of red or pinkish red. Watermelon pulp's color range also includes orange, pink, creamy white and yellow.
Chef Kunal's Watermelon Chutney calls for 2 1/2 cups of peeled and puréed watermelon rinds, 3 tablespoons of oil and 3 to 4 tablespoons of vinegar as main ingredients. The base is sweetened with 1/2 cup of sugar and salted to taste. Other seasonings are listed as one dry red chilli; 1/2 teaspoon of black salt (Hindi: काला नमक, kālā namak; also known as Himalayan black salt); 1 teaspoon each of cumin, fennel seeds and mustard seeds; 2 teaspoons of chopped ginger; and 1 tablespoon of Kashmiri chilli powder.
India's cuisines prize Kashmiri lal mirch (Kashmiri red chilli) powder's vibrant red color and mild, smoky flavor. North Indian celebrity chef, cookbook author and restaurateur Sanjeev Kapoor describes Kashmiri red chillis as "ruby red wonders" in the "Know Your Ingredients" section of his recipe portal, Sanjeev Kapoor Recipes.
The chutney's watermelon requires preliminary preparation. The watermelon rind is sliced into chunks to ease peeling the skin. Chef Kunal uses a y-shaped vegetable peeler to shave the skin. He notes that, unlike the skin, patches of pulp on the rind do not require removal as they are "fine" and pose "no problem" (timestamp 1:15).
As he crosshatches the skinned rind wedge, he observes: "Roughly cut" (timestamp 1:25). The slight irregularity of the wedge's cubes and triangles "does not matter" (1:28).
The roughly cut wedge chunks are deposited into Chef Kunal's grinder (1:36). Another chopped wedge is added to the mixer. At least two more batches of rind chunks, chopped off-camera, are dropped into the mixer. The mixer breaks the chunks into a slightly rough purée.
Three tablespoons of oil are drizzled into a frying pan. The red chilli and mustard seeds are added for sautéing until the mustard seeds splutter (2:47 to 3:04). Fennel seeds (3:05) and cumin (3:10) are added to the sauté. Chopped ginger (3:30) and then Kashmiri chilli powder (3:45) are added and blended well with a spatula into the other spices.
The watermelon purée is poured into the pan (4:02). The purée is spatulated into the sautéed spices and then is cooked for five minutes. Salt and Himalayan black salt are sprinkled into the seasoned purée (4:46).
Another 10 minutes of cooking and intermittent stirring ensues. Chef Kunal likens the desired consistency of the heated purée to that of a jam: "Just like a jam" (5:18). While the purée heats to jamminess, Chef Kunal adds 3 to 4 tablespoons of vinegar (5:42) and then 1/2 cup of sugar (6:24).
The purée's jam-like consistency signals its qualification as chutney. He says, "Have a closer look" (7:14), in a closeup of a portion that balances prettily on Chef Kunal's spatula.
Chef Kunal aesthetically spoons his Watermelon Chutney into a frosted glass bowl (7:34). He proclaims his Watermelon Chutney recipe as: "Done" (7:46).
The chutney is set aside and allowed to cool before transfer from the pan to a serving bowl or storage jar, according to the printed recipe on Chef Kunal's website. If not consumed at cooling, Watermelon Chutney requires refrigeration, with a shelf life of two to three weeks.
Chef Kunal's website recommends pairing Watermelon Chutney with bread, roti or a sandwich. Also, the Indian-style preserve teams well with rice.
Additionally, Watermelon Chutney serves as an appetizing, colorful dressing variation for Caesar Salad. As fusion cuisine, Chef Kunal's Watermelon Chutney aesthetically nuances Caesar Salad with India's favored seasonings.

Assamese Chef Plavaneeta Borah "pennes" her Chicken Caesar Pasta Salad as an appealing, flavorful dish that expands Classic Caesar Salad from an elegantly simple garden salad into an irresistibly hearty, non-vegetarian grain salad.
Caesar Salad endures as the culinary masterpiece of Italian immigrant restauranteur Cesare "Caesar" Cardini (Feb. 24, 1896-Nov. 3, 1956). The venue for Chef Cesare's inspired creation, which debuted in 1924, was his restaurant in northwestern Mexico. Caesar's Restaurant still operates in Baja California state's largest city, Tijuana.
Caesar Salad's culinary history reveals global popularity of the garden salad's original recipe and of a plethora of variations. Chef Cesare's salad continues to inspire vegan, non-vegetarian and vegetarian versions.
Assamese digital content strategist, marketing specialist, chef and food journalist Plavaneeta Borah's Chicken Caesar Pasta Salad explores the classic recipe's receptivity to creativity. Chef Plavaneeta's recipe classifies as a garden, grain, meat and pasta salad.
Chicken Caesar Pasta Salad's total cook time of 40 minutes breaks down to 10 minutes of prep time and 30 minutes of cook time. The recipe yields two servings. The recipe is graded as easy.
Chef Plavaneeta's Chicken Caesar Pasta Salad constructs the salad with two skinless chicken breasts, 2 tablespoons of olive oil, 1/2 teaspoon of chopped garlic; olive oil for three slices of bread; 20 clean lettuce leaves (type of lettuce unspecified), 1 cup of boiled pasta, 1/2 cup of cherry tomatoes, halved, and 1/4 cup of Parmesan cheese shavings. The dressing calls for 1/2 cup of mayonnaise, 1 chopped garlic clove, 1 tablespoon of vinegar and salt to taste.
The chicken breasts are rubbed with chopped garlic and olive oil and then are placed in a frying pan. During 10 minutes of pan-frying, they are turned to brown both sides. The pan is removed from the burner and set aside for 10 minutes of cooling. The cooled chicken breasts then are cubed.
The oven is preheated to 150 degrees Celsius (302 degrees Fahrenheit). During preheating, the bread slices are torn into small croutons and spread on a baking tray. Olive oil and any desired seasoning are added and then tossed lightly into the croutons. Baking time of 15 minutes goldens the croutons.
Deposit the mayonnaise, garlic, vinegar and salt into the dressing bowl. The dressing ingredients are whisked together.
The lettuce leaves are torn into rough, small portions into the salad bowl. The cooked penne, chicken cubes and halved cherry tomatoes are added and then tossed into the torn lettuce.
Nextly, the dressing is spooned into the salad bowl. The dressing and the salad are tossed well together. Chef Plavaneeta prompts about checking any seasonings.
The salad is topped with golden croutons. Parmesan cheese shavings garnish the salad.
Chef Plavaneeta's employer, New Delhi Television (NDTV) Limited, published Chicken Caesar Pasta Salad on the news media company's food portal, NDTV Food. Chef Plavaneeta describes her recipe as "a quick and easy lunch meal" that makes "all-time favourite Caesar Salad . . . more wholesome with penne pasta tossed [into] it."
Chef Plavaneeta's recipe also is available via Pakistan-based Zoya's YouTube channel, food recipes. Titled "Fast Food -- Chicken Caesar Pasta Salad Recipe / Chef: Plavaneeta Borah / Cook Time: 30 Minutes," the segment was uploaded July 9, 2017.
My family's Chicken Caesar Pasta Salad resembles Chef Plavaneeta's version. Our recipe further colorizes the salad by replacing the usually cream-yellow penne with such colorful varieties as spinach (green)- or tomato (red)-based penne.
