Chef Sanjeev Kapoor's Caesar Salad: Italian-American Classic in India

North Indian Chef Sanjeev Kapoor's Caesar Salad recipe appeals as an Italian-American classic that finds creativity and favor in Indian cuisine.
Caesar Salad's origin as an Italian-American recipe created in northwestern Mexico qualifies the elegantly simple dish as fusion cuisine in its steadfast participation in cuisines beyond its homeland. Italian immigrant restauranteur Cesare "Caesar" Cardini (Feb. 24, 1896-Nov. 3, 1956) introduced his new salad in 1924 at his restaurant, Caesar's Restaurant, in Tijuana, Baja California state. Caesar Salad's presence, in its original form as well as in variations, on Earth's seven continents confirm the dish's classicality.
Chef Cesare fashioned his original recipe with easy preparation and appealing ingredients. Garlic-toasted croutons, grated Parmesan cheese, torn romaine lettuce leaves and Worcestershire sauce comprise Caesar Salad's attractive, basic design.
North Indian celebrity chef, cookbook author, entrepreneur and television personality Sanjeev Kapoor's online recipe portal, Sanjeev Kapoor Recipes, attests to his expertise in Indian and fusion cuisines. His repertoire of Caesar Salad recipes includes Classic Caesar Salad as well as such Caesar Salad-themed variations as Caesar Deviled Eggs, Caesar Chicken Salad in Parmesan Cups, Caesar Salad With Grilled Chicken and Chicken Caesar Burgers.
Chef Sanjeev's Caesar Salad recipe fairly faithfully follows Chef Cesare's original recipe. He colorfully substitutes iceberg lettuce and red leaf lettuce for Chef Cesare's romaine lettuce. His recipe bestows Indian flavors with the use of basil and mustard, two favored herbs in the subcontinent's varied cuisines.
Chef Sanjeev's recipe calls for the Lollo Rossa variety of red lettuce. Lollo Rossa, nicknamed "lollo," namesakes La Lollo, Italian actress and photojournalist Luigia "Gina" Lollobrigida (born July 4, 1927), according to Baker Creek Heirloom Seed's website. The whole seed and plant company explains that variety's frilliness and perfect heads recall La Lollo's ". . .short, tousled hairstyle!"
The ingredient list for Chef Sanjeev's Caesar Salad begins with 2 eggs and a sufficient amount of water for cooking them. The quantity of water depends upon the size of the non-stick boiling pan.
The dressing is composed of 2 peeled garlic cloves, sea salt to taste, 3 to 4 crushed black peppercorns, 1 teaspoon Worcestershire sauce, 1 teaspoon mustard paste and 2 tablespoons extra-virgin olive oil (EVOO).
The salad calls for homemade, sautéed croutons. One tablespoon olive oil and 2 thick slices of bread are needed.
Ingredients for the salad base are itemized as 1/2 bunch of iceberg lettuce, measured at 135 grams (4.7 ounces or 2/3 cup) and 1/2 bunch of red leaf Lollo Rossa variety, measured at 100 grams (3.5 ounces or 1/2 cup). Also, 5 to 6 basil leaves are listed.
Chef Sanjeev starts his Caesar Salad recipe by pouring water into a non-stick pot. The water will be brought to boil while he assembles the dressing and makes the croutons.
For the dressing, 2 peeled garlic cloves, sea salt to taste and 3 to 4 crushed black peppercorns are placed in a mortar. These ingredients are crushed with a pestle. The mortar is set aside.
For the croutons, 2 thick slices of bread are sliced in thirds lengthwise. Then the slices are quartered into crouton cubes and set aside.
Meanwhile, the water has boiled. Two eggs are deposited. Coddling entails cooking an egg to just below boiling. Chef Sanjeev allows four minutes for coddling.
in the meantime, a non-stick sauté pan is set on a burner. Two tablespoons of olive oil are poured into the pan. Then the bread cubes are added. The cubes are sautéed to slightly browned-edge crispness. Set aside.
Back to the dressing, 1 teaspoon of Worcestershire sauce is added to the mortar and is stirred into the ingredients. Then 1 teaspoon of mustard paste is added and stirred. The eggs are retrieved from the pot, cracked into the mortar and stirred well. Finally, 2 tablespoons of extra virgin olive oil (EVOO) are stirred until all ingredients are blended well. The mortar is set aside.
The salad is assembled in a large bowl. The iceberg lettuce leaves are torn into quarters as the pieces are added. Lollo Rossa leaves, which are smaller, are torn into thirds and added. The basil leaves are torn in thirds as they are added.
The dressing is spooned onto the greens. Then two wooden mixing spoons are used to toss the greens with the dressing.
Next, the croutons are added. The Parmesan cheese is shaved generously across the top.
After hand-tossing the salad half a dozen or more times, Chef Sanjeev scoops the salad with his hands for final plating.
Chef Sanjeev notes a non-vegetarian version of his Caesar Salad recipe. He suggests grilling chicken to transform his recipe into Caesar Salad with Grilled Chicken.

The recipe for Classic Caesar Salad traces back almost 100 years to Tijuana, a resort border city in nothwestern Mexico's Baja California state. The elegantly simple recipe's creator, Italian immigrant restauranteur Cesare "Caesar" Cardini (Feb. 24, 1896-Nov. 3, 1956), introduced his salad in 1924 in his restaurant, Caesar's Restaurant. Chef Cesare's original recipe tosses a salad base of coddled eggs and romaine lettuce leaves drizzled with fresh lemon juice, olive oil and Worcestershire sauce and topped with grated or shredded Parmesan cheese and garlic-toasted croutons.
Chef Cesare's easy, flavorful presentation has become a classic recipe that enjoys worldwide familiarity and popularity. The salad's delectable simplicity encourages non-vegetarian and vegetarian variations and also inspires transformation into new formats, such as burgers.
North Indian celebrity chef, cookbook author, entrepreneur and television personality Sanjeev Kapoor's recipe portal, Sanjeev Kapoor Recipes, includes the Mumbai-based chef's recipe for Caesar Salad. Chicken Caesar Burger numbers among his Caesar-inspired repertoire of offshoots and variations.

The recipe constructs the burger's base with two boneless chicken breasts, four burger buns and four to five shredded iceberg lettuce leaves. Butter is spread on the insides of the horizontally-halved buns, which then are sprinkled with one teaspoon chopped garlic.
Two teaspoons garlic, 1/4 teaspoon red chili flakes, one tablespoon olive oil and, to taste, crushed black peppercorns and salt are mixed in a bowl with the chicken breasts. The chicken breasts marinate for 10 to 15 minutes.
Bun halves are placed on a heated griller that has been greased with butter. Grill marks on the bun halves signal their removal.
The marinated chicken breasts are set on the griller for full cooking. Then remove the chicken breasts when each side shows grill marks.
The shredded iceberg lettuce leaves are set on the base of each bun. Grilled chicken is bedded on the lettuce, sprinkled with Parmesan cheese powder, drizzled with Caesar Dressing and covered with the bun top.

Caesar Salad will observe its 100th anniversary, or birthday, in 2024. The simple, elegant salad's original recipe has become a global classic. Furthermore, Caesar Salad's easy receptivity to non-vegetarian and vegetarian variations has assured its popular place in fusion cuisine.
Italian immigrant restauranteur Cesare "Caesar" Cardini (Feb. 24, 1896-Nov. 3, 1956) created the salad in 1924 in his self-named restaurant, Caesar's Restaurant, in northwestern Mexico's resort border city, Tijuana. Chef Cesare's original recipe blends fresh lemon juice, olive oil and Worcestershire sauce into a tossed salad base of coddled eggs and romaine leaves and tops the dish with grated or shredded Parmesan cheese and garlic-toasted croutons.
Anchovy fillet or anchovy paste frequently appears in variations, either for creativity or for misidentification as an original ingredient. In fact, the original recipe's subtle savor of anchovies derives from Worcestershire sauce's characteristic ingredient, fermented anchovy pieces.
Parmesan cheese cups feature as crispy, decorative settings for dips and salads. The cups give shape to the popular cheese snack, Parmesan crisps. Parmesan crisps and cups are reminiscent of frico (Friulian/Friulan: fricò), a traditional dish of the Friuli (Friulian: Friûl) region in Northeast Italy. The preparation of frico as thin frico involves stovetop melting of shredded cheese in oil. Thin frico's slightly crispy malleability allows for modelling into such creative food container shapes as baskets and bowls.

Chef Sanjeev places Caesar Salad in Parmesan Cups in the meal course of salads. The cooking level is determined as easy. My family's extra cheesy recipe for Parmesan Cups allots two handfuls (about 1/2 cup) of medium grated, or shredded, cheese for each Parmesan cup.)
The cheese is sprinkled into a non-stick pan and heated until it melts. The cheese round is tipped from the pan, flipped, draped onto an inverted, small glass bowl for shaping by gentle pressing and then set onto a serving platter. The process is repeated to form the next three cheese cups.
The dressing whisks egg yolk (one), mustard paste (one teaspoon), red wine vinegar (one teaspoon), garlic cloves (two to three, grated) and capers (one teaspoon, finely chopped) in a bowl. Subsequent whiskings gradually incorporate oil (1/4 cup) and then salt, crushed black peppercorns.
The salad combines one grilled, chopped chicken breast with romaine leaves (six to eight; torn) and croutons (1/4 cup). The dressing is added and tossed with the salad.
The final step portions the salad into each cheesy cup.

North Indian Caesar Deviled Eggs by Sanjeev Kapoor blend two classics, Caesar Salad and Deviled Eggs, to create a new classic that wins as deliciously satisfying, irresistibly attractive and easy-to-make boat appetizers.
Caesar Salad and Deviled Eggs are two classic, internationally popular recipes that are receptive to variations. The original Caesar Salad recipe, created by Italian immigrant restauranteur Cesare "Caesar" Cardini (Feb. 24, 1896-Nov. 3, 1956) in 1924 in Tijuana, northwestern Mexico, calls for a tossed salad of coddled eggs, garlic-toasted croutons, Parmesan cheese, romaine leaves and Worcestershire sauce. The basic recipe for Deviled Eggs, also known as Stuffed Eggs, calls for hard-boiled eggs with a paste of egg yolks, mayonnaise and mustard stuffed onto halved egg whites. Both recipes may appear as either main or side dishes. Deviled Eggs also qualify as appetizers.
North Indian celebrity chef, cookbook author, entrepreneur and television personality Sanjeev Kapoor finesses Indian and international beverages and dishes for the impressive array of classic, exotic, modern and traditional recipes in his culinary repertoire. Caesar Deviled Eggs, Caesar Salad and Deviled Eggs number among the "more than 10,000 tried & tested recipes" provided on his recipe portal, Sanjeev Kapoor Recipes.
Caesar Deviled Eggs are described as a "delicious appetizer made using eggs and Caesar dressing" on the website for Betty Crocker, the popular family cookbook written by staff at the Betty Crocker trademark's holder, General Mills Inc. Betty Crocker's recipe removes the salad component by omitting romaine leaves. Contrastingly, American cookbook author, celebrity cook, entrepreneur and television personality Rachel Ray (born August 25, 1968) blends anchovy paste and Worcestershire sauce into the egg yolk mixture and garnishes her Caesar Deviled Eggs with finely chopped romaine lettuce hearts.
Chef Sanjeev describes Caesar Deviled Eggs on the dish's recipe card as "a fun twist on traditional deviled eggs and the perfect comfort food." He identifies the recipe as fusion cuisine and places it in the meal course of snacks and starters. He describes the dish's inspirational element, Caesar Salad, as a "world famous salad with tangy dressing" borrowed from Italian cuisine.
Chef Sanjeev's recipe for Caesar Deviled Eggs calls for four hard-boiled and peeled eggs; one tablespoon of chopped garlic; one teaspoon each of capers, mayonnaise, red wine vinegar and Parmesan cheese powder; one tablespoon each of olive oil and water; salt and crushed black peppercorns, according to taste; and two to three torn romaine leaves. After whisking, the egg yolk mixture is piped onto the egg white boats. A torn romaine leaf tops each boat.
Chef Sanjeev values "at least a dozen" eggs as essential to a well-stocked refrigerator, according to his Caesar Deviled Eggs recipe card. He considers eggs as the "handiest food to have around" and notes the easy preparation of this "perfect protein source" for quickly quelling hunger.



Sanjeev Kapoor was born April 10, 1964, in Ambala, then East Punjab province (Haryana state, since Nov. 1, 1966), northwestern India. His father's position with State Bank India entailed frequent relocations via assignments in Delhi, National Capital Territory (NCT), northwestern India, and in Meerut and Saharanpur, northwestern Uttar Pradesh, north central India.
After graduating from Delhi's Government Boys Senior Secondary School in Rajouri Gardens, he attended New Delhi's prestigious Institute of Hotel Management Catering & Nutrition (IHM), Pusa (IHM Pusa). Specializing in Catering and Nutrition, he graduated in 1984.
He subsequently fulfilled his two years of management traineeship through the India Tourism Development Corporation (ITDC). He trained at The Ashok, the ITDC's five-star hotel in the Chanakyapuri neighborhood and diplomatic enclave in New Delhi.
He then was posted as chef under study at Hotel Varanasi Ashok, a four-star hotel in the Hindu pilgrimage city of Varanasi, southeastern Uttar Pradesh. After six months, he was promoted to Executive Chef. He remained there for six years.
He returned to New Delhi to chef at ITDC's Hotel Samrat. The four-star hotel is located near Rashtrapati Bhavan ("Presidential Palace"), the official residence of the President of India. Chef Sanjeev remained there for eight months.
Chef Sanjeev next relocated to Mumbai, the cosmopolitan, coastal capital of west central India's Maharashtra state. He joined the Centaur Group, the Hotel Corporation of india's (HCI) luxury hotel brand.
The frequently traveling chef remains based in Mumbai. He initially settled in Andheri East, a locality in western Mumbai. He has lived in the upscale, western Mumbai suburb of Juhu since 1999.
Chef Sanjeev's accomplishments include entrance for the largest serving of rice and beans in the Guinness Book of Records in 2017. He prepared 918 kilograms of khichdi, a dish of rice and legumes, in a custom-made, 7-foot-diameter kadhai, the subcontinent's wok-like, flat bottomed cooking pot. Chef Sanjeev's recipe complimented the chawal (rice) with grains, such as amaranth, bajra (pearl millet) and jowar (sorghum) and legumes, such as mung beans. He performed his feat before a live audience at Great Indian Food Street Hangar, India Gate Lawns, New Delhi, during World Food India (WFI) 2017, which was held Friday, Nov. 3, to Sunday, Nov. 5, by the Indian Ministry of Food Processing Industries (MoFPI).
Sanjeev Kapoor has displayed his culinary expertise in Indian and international recipes through such varied media outlets as cookbook authorship, food channels (FoodFood) and cookery shows (Khana Khazana), recipe portals and websites. His recipes for Caesar Deviled Eggs, Caesar Salad and Deviled Eggs, which are easily accessed online via his recipe portal and YouTube accounts, exemplify his commitment to fusion cuisine.
